What's for lunch today?
Fresh picked greenhouse goodness.
I went to check the greenhouse today to see if there were any ripe tomatoes or watermelon, and was pleasantly surprised that there were more than enough tomatoes ready-to-pick, and create into some type of salad for the whole family.
This is how it went...
Four Tomato Spinach Salad
Here's the creation:
Fresh out of the garden: Roma, Cherry, Heirloom and Beefsteak tomatoes, parsley, chives, green onion, New Mexico Big Jim Peppers.
From the store: Avocado, pine nuts, spinach and balsamic dressing.
Using any fresh ingredients in a salad is always great, but adding homegrown ingredients makes you feel even better!
I know that's a sappy comment, but it's true!
I chopped the fresh herbs and tomatoes, added salt and pepper, balsamic italian dressing, topped with avocado slices, toasted pine nuts and laid over a bed of spinach for the perfect semi-homegrown salad.
