Little Dippers ~ Coconut Chocolate Chip and Nut Cookies

Do you remember when you were a kid, or maybe you still do this, sitting at the kitchen table with a stack of homemade cookies dipping them into a glass of milk until just soft enough to take a big bite?

I remember my grandma making these little crispy cookies that I couldn't wait to dip into a glass of milk.  They were filled with chocolate chips, coconut and pecans.

This was my Grandma's version of the recipe....

   Pull out the mixer and mix the butter with the sugars, egg and vanilla. 


Mix until creamy.


Slowly add the flour, baking soda and salt.


Add the coconut flakes.


Add the semi-sweet chocolate chips.


 Add the pecans.


With a spoon, form batter into small round balls and place on cookie sheet.
Bake for 10 to 12 mins. or until golden brown.


Place cookies on a wire rack or on parchment paper to cool.


Get the milk!






INGREDIENTS

  • 1 CUP AND 2 TABLESPOONS FLOUR (All-Purpose)
  • 1/2 TEASPOON BAKING SODA
  • 1/2 TEASPOON SALT
  • 1/2 CUP SUGAR
  • 1/4 CUP BROWN SUGAR
  • 1/2 CUP BUTTER (1 STICK)
  • 1/2 TEASPOON VANILLA
  • 1 EGG
  • 1 CUP SEMI-SWEET CHOCOLATE CHIPS
  • 1 CUP COCONUT FLAKES
  • 1/3 CUP PECAN PIECES
YIELD:
  • 3 DOZEN COOKIES (36)


DIRECTIONS:

Preheat oven to 350 degrees.

In separate bowl add flour, baking soda, salt and set aside.

In mixing bowl, mix softened butter, white sugar, brown sugar, and vanilla until creamy. Add egg then slowly add flour until fully combined. Fold in coconut, chocolate chips and pecans.

With a spoon, create small rounded balls and place on cookie sheet.

Bake for 10 to 12 minutes or until golden brown. Allow cookies to cool on wire rack or parchment paper.
